Hi Mike, You may have a leaky head gasket. I would tighten the head bolts if that is the problem. I had this problem in our 1957 300C. Twice, I lost a soft plug in July 1959 on our honeymoon. The first time I was passing a car in Northern California and the speedometer showed over 115 MPH. The next time two weeks later I was in second gear passing a long line of cars t in excess of 75 MPH west of Spokane, Washington. After these two events, I would lose water from the radiator overflow pipe during warm up before the thermostat opened. Seven of the eight cylinders were leaking. I had the original type shim gaskets which I replace with Felpro gaskets. Of course, I have not driven that fast since.
