Regarding the "Just Dashes" redo of the 1961 dash, I have seen a couple and they are pitiful, in my opinion.  I wouldn't have them do any dash for me.  Really lousy work from what I have seen. 
I have heard that SMS might be doing some door panels and dashes, so you might want to check with them.  From what I have seen of their door panels, they seem to be pretty good.
