There is definitely a group of people whose motto is "It's only original once".
Also, the danger (if you're cheap like me) of just trying to improve small areas of paint damage can lead to doing an entire panel, and then eventually a much more expensive complete paint job than you ever wanted to own/worry about.  Like just about everything else automotive, it's a matter of taste.  That beautiful new paint is going to make the chrome look shabby, then the interior isn't going to be a good match for that new exterior, etc.  It can get out of control in a hurry. 
I love looking at amazingly correct restorations with fabulous paint, but I get much more enjoyment out of getting my cars dirty by driving them than I do cleaning them up afterwards.  
At the shows I wind up talking more with the folks who have the most bugs stuck in their grilles from the drive to the show that morning than the people who  are too busy with Q-tips and tweezers removing them so they can win a trophy.
It's your car, so continue to 'please yourself' with whatever makes you happiest with your vehicle.  There's plenty of room in the hobby for a variety of opinions/practices, and that variety is what makes it more interesting, too.

What gets me is that in this day and age you see cars for sale with newish paint yet there are never any GOOD photos of the metal work before the paint.

 

The metal work done on this car may have been ok, but I would l have liked to see detail photos with the bad metal cut out before the new metal was welded in.  I would like to see if the metal was welded as and underlayment and seam welded and on and on…

 

Also, no borescope photos of the inside of the sills…

 

I can tell you that this last year when I had the 300K painted, I had them sand it down to bear metal and I took photos of everything before any work was started.

The car had very poor patches when I bought it. As I was stripping the paint I found metal overlay repairs in the usual areas. Both rear bottom finders and the rockers. These patches were removed the underlaying rust removed and repaired. the trunk floor was also poorly repaired. it was cutout and replaced. As I striped the balance of the car there was surface rust at the base of panel edges. Top of the front windshield, top of the rear windshield, bottom right and left corners of the rear windshield. in addition the rear trailing edge of the trunk had a horrendous repair that I could not fix. I purchased a replacement from JC Auto Restoration. I also find it curious that the Data plate is in such poor condition. I believe it would have been mounted inside the engine compartment. That area had no rust as expected.
