In an automotive application you would always want the double flare on fittings. The steel brake and fuel lines are all double flared from the factory. The key to a good flare is taking your time, ensuring the end you're flaring is completely straight and clean (no burrs inside or out), using a good tube cutter, and remembering to place the nut on first! 
 
You might also want to purchase a good tube bender, if you don't already have one.
